No Bake Lemon Cream Cheese Pie Recipe
Summer is a busy time, but that is no excuse to skip making dessert. There are dozens of good desserts that can be made in minutes. This No Bake Lemon Cream Cheese Pie has only five ingredients and can be put together in less than 15 minutes hands-on time. It can also be made ahead and refrigerated for a day or two before serving. This pie can be taken to a pot luck gathering or served with grilled foods. It travels well and holds up, so it’s also great for a picnic.

Although you can make your own graham cracker crust (2 cups graham cracker crumbs, 3 tablespoons sugar, 3 tablespoons melted butter; mix well and press into a 9” pie pan. You can bake 10 minutes at 350° then cool thoroughly if you like - it holds together better, or just chill well) the store bought ones are pretty good and save a lot of time. This pie is light and lemony, and is perfect for summer gatherings. Make sure the cream cheese is softened to avoid lumps. There is no need to thaw the lemonade concentrate, since it will melt as it is beaten into the cream cheese mixture.

2 8 oz. packages cream cheese, softened
2/3 cup heavy whipping cream
1 package instant lemon pudding mix
3/4 cup frozen lemonade concentrate

1 9" graham cracker crust

  1. Pour into the graham cracker crust.
  2. Cover with plastic wrap and place in the refrigerator until chilled and set, 3-4 hours.
