Easy Toffee Drops Recipe

Sometimes simplicity is best, and that is certainly the case with these Easy Toffee Cookies. They contain basic ingredients that most of us have in our pantries, and they are perfect for filling up the cookie jar. Unfortunately, these cookies are addictive – they may not seem special or gourmet, and they aren’t - but you will find yourself eating more than one (or two or a dozen). I left them on the cooling racks the other day, and they miraculously disappeared after my son can home from the gym. He had no explanation for the disappearance.

These cookies are both crunchy and chewy at the same time. You can use plain toffee bits, or use the ones that contain chocolate. They will be delicious either way. If you like chocolate, you can add 1/2 cup chocolate chips in addition to the toffee bits.
Makes about 4 dozen
1 cup butter
1 1/4 cups sugar
3 egg yolks
1 teaspoon vanilla
2 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
1 8 oz. package toffee baking bits, or Heath Bar Bits

- Preheat oven to 350°.
- Cream the butter, sugar, egg yolks, and vanilla until light.
- Place a fine strainer over the mixture and measure in the flour, salt, baking soda, and baking powder; shake through. Mix on low speed until well mixed. Stir in the toffee bits.
- Using a tablespoon sized scoop, scoop balls of dough onto a parchment or silicone mat lined baking sheet. The dough is quite thick and a bit crumbly, so make sure you pack it into the scoop to insure uniform cookies.
- Bake 14-18 minutes or until set. Remove from the oven, let sit on the baking sheet five minutes, then transfer to cooling racks to cool. Store in an airtight container.
